Analysis of Volatile Compounds in Different Varieties of Plum Fruits Based on Headspace Solid-Phase Microextraction-Gas Chromatography-Mass Spectrometry Technique

To investigate the differences in volatile compounds of plum fruit samples from different cultivars, ‘Fengtang’ plum, ‘Kongxin’ and ‘Cuihong’ fruits were analyzed using headspace solid-phase microextraction–gas chromatography–mass spectrometry (HS-SPME-GC-MS). The results demonstrated that a total 938 identified three fruits, including 200 terpenoids, 171 esters, 116 heterocyclic compounds, 89 hydrocarbons, 82 ketones alcohols, 63 aldehydes, 54 aromatic 21 amines, 18 acids, 17 phenols, 10 nitrogenous 7 sulfur other 470 which common to all cultivars. Moreover, 704, 691, 704 substances detected, respectively, with heterocycles as main accounting for 62.12~72.03% compounds. principal component analysis (PCA) cluster (CA) illustrated similar terms compounds; those Orthogonal partial least squares discriminant was performed, revealing typical differed among varieties; thus, could be better distinguished. These can provide theoretical basis studies flavor, quality, geographical origin identification.
